Ingredients
500 g black sapote flesh
500g sultanas
1/2 cup water
1&1/2 teaspoons bicarb of soda
1&1/2 cups self raising flour
2 eggs
Method
1. Wash sultanas and strain.
2. Puree black sapote flesh add water and sultanas.
3. Let stand for sultanas to absorb water.
4. Add beaten eggs.
5. Add flour and soda.
6. Cook for one hour in moderate oven.
Result
A beautiful moist fruit cake.

A one acre Sub Tropical garden situated just east of Brisbane. We have opened our garden to the public for 18 years. We open in November to aid a specific charity. On this weekend get a lot of pleasure meeting fellow gardeners. Judy sells many rare plants and this helps us to do more projects and buy more plants. Judy and I are 'plants-people'and cannot resist buying something rare that we do not have. It has been very hard gardening as we seem to be in a severe drought most years.

Black Sapote Cocktail
We bought four black sapote fruit at the 2016 open garden. I intended to try the recipe we received on the day but as we were moving house I ran out of time. Suddenly we had four very ripe black sapote. What to do?
A blender, vanilla icecream, whisky, port and butterscotch schnapps solved the problem. Four sapote later and a dash of cream swirled into the finished concoction resulted in the most sensational dessert cocktail ever! Joy
